i want to get back to feeling better and doing right by my body. but it's hard to avoid those sugary treats...
to ease the separation, pete adapted a delicious paleo cookie recipe for us. it takes such a small amount of time to make these, and they're cheap too. not to mention delicious...
a lot of the time we make a batch and end up eating the whole thing in a day. they are just too darn scrumptious.
i would highly reccommend eating them with a glass of cold milk, or if you're off dairy, a nice warm tea, in an oversized starbucks mug you borrowed off a friend...
how to make pete's paleo cookies...
mix together the ground almonds, salt and baking soda. in another bowl mix the honey and coconut oil and add them to the dry ingredients, mixing thoroughly.
add the chocolate chips. the batter should be thick enough to roll little balls in the palm of your hands and set them on the baking sheet. usually our cookies expand so much that they all join together anyway, but its good to get them even.
make 15 - 20 cookie dough balls and spread them evenly on parchment paper on a baking tray. press the balls down as flat as you can.
bake at 150°C for about 5-6 minutes, keeping an eye on them. they should go golden brown, but depending on your oven may take a little less or a little more time, but probably no more than 7-8 mins.
take out of the oven and if they've glued together cut them into squares and place on a plate. eat while they're still warm, and the chocolate is all gooey...yum.
to make them you'll need:
1 1/4 cups ground almonds
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup honey
1/8 cup coconut oil
1/4 cup dark choc chips (63% cocoa)
